The trendiest neighborhoods right now are on the east side not on the west. But I will give you some ideas for the neighborhoods you chose.

In SoHo (South of Houston):
Try

Bar89
It is located between Prince and Spring at 89 Mercer St. Make sure you check out the bathrooms on the second floor. Try their champagne cocktail if you want to get a nice buzz and a total sugar rush. Their Mojitos are not that bad either, although I am more partial to ones at Zinc bar.

From Bar 89 You can move onto Thom at the Thompson Hotel the bar is upstairs for amazing Lychee martinis. It is located at 60 Thompson right off Broome Street. Not a very romantic place, and could get really crowded, but interesting mix of people.

I would tell you about a special hide-away I know on Spring street, but I am pretty sure you will not be able to spot it, cause the place is tiny and doesn't have a sign.
If you still want to chance it - Red Bench at 107 Sullivan Street between Prince and Spring Streets as well, but the door is really small tucked away between two other establishments.

If you want to blow her mind and well, empty your wallet, try Fiamma for dinner, that Italian Place is out of this world - the scene, the crowd the food - everything is great, except for the tab you will get at the end of the evening. It may cost you a small fortune.
This particular spot is located at 206 Spring St between 6th Ave & Sullivan Street.

If you want to take it down a notch: head to Blue Ribbon Sushi and go early or prepare to wait in line for an hour - rule of a Saturday. Most sushi places worth going to do in NY do not take reservations for 2 people.
Blue ribbon is located at 119 Sullivan Street between Prince and Spring Streets.

If you are in SoHo earlier in the night you can take a walk on West Broadway, which is really the Madison Avenue of SoHo - all the Couture stores are there - and really well lit.

There are a few really nice cafes where you can grab a seat on the sidewalk if it's not too cold and sip your latte having a New York moment (there's one right off west Broadway across from French Connection, I forgot the name).

Moving to the village. I am assuming you meant West Village.
There's an amazing sushi place called Tomoe Sushi - it opens at 5 and the line wraps around the block by 7pm. However, it's totally worth the wait.
It’s fairly cheap and their California rolls are so big that you have to split each piece in at least a half to manage eating.

Tomoe is located on Thompson Street between Bleeker and Houston Streets.
For amazing tea with tapioca Thai style head over to St. Alp's Teahouse on Bleeker Street between Sullivan & Thompson Streets.

For something more low key head over to Vol de Nuit on West 4th and 6th Avenue. They have Chimay Grand Reserve and Belgian Fries. Muscles are not worth trying... They really are not that great. To get there - walk through the yard as soon as you see the sign for Pomme Frites. The place is dark and has wood benches. It has a very neighborhood feel to it.

For some Mexican Fare Try Burrito Loco on West 4th between 6th and 7th - walk up as soon as you see red jalapeno lights. Their margaritas are very good and so is guacamole, which they make right in front of you in a lava pot, the old-fashioned way creating it as mild or as spicy as your heart desires.
